It was a class full of learning the technique of how to whip egg whites while “SLOWLY” adding sugar and a few other ingredients to make the famous Italian Meringa (meringue with cream and fresh fruit)! Everyone did a great job trying their best to cook like Italians. It was a fun night as we also learned Uccellini scapati (beef rolls with sage ham and parmesan cheese). We also tried our hand at creamed potatoes with parmesan cheese cooked as we learned with the peel on (to be peeled later)! When signing up for our Italian cooking classes you will receive a shopping list, recipes, and all the information you need to join the online class. When making the meringa (meringue) you must carefully separate the egg whites! Making the meat rolls is a technique as you want to be able to hold all the sage, cheese, and bread crumbs, as well as sealing all that flavor inside! AnnaMaria is giving us and up close demonstration. When asked how many times she has made these traditional meat rolls she said “to many to count”! We understand why because they are delicious! After showing us how it is done AnnaMaria and Mariaemilia take a look to see how everyone else is doing. This is not the way we thought we would be doing cooking classes together but AnnaMaria gives a thumbs up to everyone!

No class would be complete without a small tour of some of the interesting rooms and items of Palazzo Torriani!
Mariaemilia explaining some wedding sonnets (poems) found in the attic of the palazzo from many years gone by of a family member. As we have mentioned many times Marradi Italy is steeped in history for many Italian historic factors. To mention one this area was part of the Gothic Line of WWII. Palazzo Torriani was taken over by the Indias, Germans, and the British during this time. You can find bits and pieces of these remanence in Palazzo Torriani. This is Mariaemilia showing the sign left by these soldiers on the door to what is now the dinning area. Our hope is one day you will come join us in Marradi but until then we can bring a little Italy to you!
AnnaMaria, Mariaemilia and I would like to thank all the people that have joined our Italian Cooking Class. We have learned so much in helping to create this new adventure! We truly appreciate all the input of our clients as they help us navigate this new “no travel” life style in this moment.
